Home made Ketchup Sauce

Everyone’s favorite childhood condiment, ketchup, is often sold with a long list of additives on the ingredients labels. Bring ketchup back into the warmth of your kitchen by making your own delicious version from scratch!

A note on this ketchup,don’t excpect it to taste like Heinz ketchup! This is a full flavoured hom made ketchup that will give a comforting home made taste to veggie burgers, fries and wherever you want to add ketchup! You can play with the flavour. Try add extra curry spices for curry ketchup, or add excting chili heat, or swop some of the tomato for cooked beetroot or other creative excursions to make your own customised ketchup flavour.

Makes ca 1 liter ketchup sauce

Place a saucepan over medium-high heat and add a drizzle of olive oil. Add the red onions and celery and fry for about 2 minutes until softened and fragrant. Add the garlic and spices. Cook, stirring for 1 to 2 minutes before adding the fresh and canned tomatoes, capers and water. Cook for 15 minutes. Remove from the heat and pour the sauce through a sieve twice to make it smooth.

Return the sauce to the saucepan and stir in the vinegar and coconut sugar. Let the sauce simmer and reduce to your desired thickness. Remove from the heat and bottle the ketchup when cooled. Refrigerate.

olive oil, for frying
1 red onion, finely chopped
100g finely chopped celery 
2 cloves garlic, crushed
1 teaspoon ground coriander
1/2 teaspoon cumin seeds
1⁄4 teaspoon ground cinnamon
1⁄2 teaspoon fennel seeds
1/2 teaspoon mustard seeds
1 teaspoon salt
1⁄2 teaspoon freshly ground black pepper
1/2 teaspoon hot sauce
800g best quality plum tomatoes, chopped small
1 tin (400 g) canned plum tomatoes
2 tabelspoons capers
100ml water
100ml red wine vinegar
3/4 tablespoon tamarind paste or 1 tablespoon vegan Worchester sauce or (see vegan note)
40g coconut sugar or brown sugar

Vegan and gluten-free notes

VE The Classic Worchester sauce contains ansjovis or fish, find a vegan brand or use 3/4 tableespoon tamarind paste instead.
